If you’ve been hooked on the Great British Bake Off, come and treat yourself to a couple of days perfecting your sweet baking skills. We’ll spend some time learning patisserie techniques such as how to make sweet pastry and crème anglaise for a fresh fruit tartlet, choux pastry for eclairs and some lovely biscuits to serve with coffee. Then it will be onto cakes where in groups we’ll make several classic British cakes using different methods including a gingerbread, a tea loaf and a whisked sponge. An understanding of basic recipes and proportions will be covered which will enable you to adapt recipes to make a wealth of variations to suit every occasion. A course for those who would like to learn the basics and for those who’d like to develop their baking skills further.
